Butternut squash pancakes

Ingredients
- 2 Eggs
- 1/2 cup cooked Butternut Squash
- 2 Tablespoons Almond Butter or Nut/Seed Butter of your choice (Sunflower Seed Butter pictured)
- 1/2 teaspoon pure Vanilla extract (optional)
- 1/2 teaspoon ground Cinnamon (optional)
Instructions
- Mix ingredients together using an immersion blender.
- Pour batter into a greased, heated frying pan ( I use coconut oil, butter or ghee).
- Top with butter or ghee, raw honey (optional) and cinnamon.
