Ingredients
  1. 1 Tbs olive oil, avocado oil, coconut oil or ghee
  2. 4-5 cups home made bone broth or vegetable broth (see "basic bone broth" recipe under "soups"
  3. 4-5 cups purified water
  4. 3-4 carrots, chopped
  5. 5-6 stalks of celery, chopped
  6. 1 yellow onion OR a bunch of green onions for Low FODMAP version, chopped
  7. 2-3 cloves of garlic, minced (do not use for Low FODMAP version)
  8. 1 bunch of kale, chopped
  9. 3-4 sprigs of fresh parsley, minced*
  10. 4 fresh sage leaves, minced*
  11. 1 Tbs fresh rosemary, minced*
  12. 1-2 tsp fresh marjoram, minced*
  13. 1 tsp fresh thyme, minced*
  14. 2 bay leaves
  15. 1-2 tsp sea salt, taste, and see if it needs more
  16. freshly ground black pepper or white pepper to taste (or both!)
Instructions
  1. Heat oil in a large soup pot on medium heat (if using olive oil, use lower heat while sautéing to prevent burning)
  2. Add carrots, celery, onions, garlic and herbs. Sauté for a few minutes until veggies become slightly tender
  3. Add broth and water and bring up to a simmer until veggies are desired tenderness
  4. Add kale and season to taste with salt and pepper
  5. Serve into a bow, enjoy and acknowledge how each bite is nourishing your body!
Notes
  1. Try adding minced ginger or grated lemon rind for a bit of extra zing
