Herbed vegetable soup

A nourishing, savory soup that feels good with every bite
Ingredients
- 1 Tbs olive oil, avocado oil, coconut oil or ghee
- 4-5 cups home made bone broth or vegetable broth (see "basic bone broth" recipe under "soups"
- 4-5 cups purified water
- 3-4 carrots, chopped
- 5-6 stalks of celery, chopped
- 1 yellow onion OR a bunch of green onions for Low FODMAP version, chopped
- 2-3 cloves of garlic, minced (do not use for Low FODMAP version)
- 1 bunch of kale, chopped
- 3-4 sprigs of fresh parsley, minced*
- 4 fresh sage leaves, minced*
- 1 Tbs fresh rosemary, minced*
- 1-2 tsp fresh marjoram, minced*
- 1 tsp fresh thyme, minced*
- 2 bay leaves
- 1-2 tsp sea salt, taste, and see if it needs more
- freshly ground black pepper or white pepper to taste (or both!)
Instructions
- Heat oil in a large soup pot on medium heat (if using olive oil, use lower heat while sautéing to prevent burning)
- Add carrots, celery, onions, garlic and herbs. Sauté for a few minutes until veggies become slightly tender
- Add broth and water and bring up to a simmer until veggies are desired tenderness
- Add kale and season to taste with salt and pepper
- Serve into a bow, enjoy and acknowledge how each bite is nourishing your body!
Notes
- Try adding minced ginger or grated lemon rind for a bit of extra zing
